Chrysanthemum greens are typically sold in Asian markets (seasonally), and have many health benefits. Just like with any other vegetables, fruits, greens, or herbs, it is used in many cuisines with a local flavor of seasoning twist. When I try something for the first time, I go for the raw option (if edible raw), then plain steam/boil/bake to get the most flavors possible. After that I experiment by adding other ingredients.


A delicious salad recipe is already posted, but I am still experimenting with the raw greens. I found the flavors is a bit different when cooked v. raw. If you like the smell of chrysanthemum flowers, and a cup of strong herbal tea, then you will like chrysanthemum greens. But, either way, I recommend you try because of its many health benefits -- the list is long; preventing high blood pressure and diabetes, reduces fever, eases cold, helps with headache, dizziness, and swelling.


The trick to cooking chrysanthemum greens is to not overcook them, which really applies to most greens, unless you enjoy mushy, slimy clumps of greens on your plate. It will take seconds to overcook, so it's best to stick around when boiling, simmering, or steaming these greens. My favorite way of cooking them, is in the oven described in this salad recipe.
