Cauliflower Bagel

Bagels or donuts? Definitely Bagels!

Ingredients
3 cups of grated fresh cauliflower
3 tbsp almond flour
2 eggs
salt to taste
Seasoning
1 tsp poppy seeds
1 tsp sesame seeds
1 tsp hemp seeds
1 tsp flax seeds
1 tsp dried onions
0.5 tsp coarse salt
Directions
1. Using a hand grater or a food processor grate the cauliflower until rice consistency is formed. Careful not to over process if using the electric machine.
2. In a medium bowl, mix the cauliflower, eggs, almond flour and a pinch of salt.
3. In a separate small bowl combine everything from the Seasoning list above, and mix well.
4. Preheat oven to 400 F. Lay the baking sheet with parchment paper, and move nearby for the next step.
4. With clean and dry hands make even sized balls, then gently press to form patties. Lay each patty on the baking sheet and poke a hole in every other patty with your finger, rotating your finger and gently pressing down. Be gentle not to break the bagel. You should have about 6-8 bagels formed.
5. Sprinkle with the everything mix and bake for about 30 minutes until golden brown. Let completely cool before removing from the baking sheet to avoid breaking.
Tips
For extra crisp bagels, broil for 2-3 minutes, but watch closely not to burn.
Add very little salt to the bagel mix, and move quickly as salt will make cauliflower mix watery. Should this become an issue, gently squeeze the liquid out with your hands when making the patties.
Enjoy as bread, or make a lox bagel sandwich.
Use fresh cauliflower as the frozen one would produce lots of liquid during baking and will affect the flavor.
