Zucchini Fritters

Simple Delicious Snack

Ingredients
2 medium zucchinis (coarsely grated)
1 large egg
0.5 cup all purpose flour (or coconut flour)
0.5 cup of olive oil for the mix
0.5 cup of mixed minced fresh herbs (cilantro, basil, thyme)
salt & pepper to taste
Safflower oil for cooking the fritters
Directions
1. Grate the zucchini then place it in a sieve or colander over a bowl to drain the liquid for about 15-20 minutes. Gently press with a spoon as needed, but to not squeeze too hard.
2. Whisk the egg in a large bowl with the flour, add the herbs, salt, and pepper, then add grated zucchini. Mix well.
3. Heat oil in a large skillet over medium-high heat until oil is shimmery and is hot. Drop a heaping tablespoon of the zucchini batter into the skillet and gently press to flatten with the back of the spoon, do not press too hard.
4. Flip once the sides are golden yellow, cooking about 4-6 minutes on each size.
Tips
Lower the hear of you notice the fritters are burning, but stay raw inside.
Slightly tilt the bowl by placing a towel underneath to allow the liquid come to the bottom of the bowl.
If it ends up sticking to the pan and the fritters do not flip easily, add few more beaten eggs and make a frittata.
