Chrysanthemum Greens

Ingredients

1 bunch of chrysanthemum greens

4 garlic cloves minced 3 tbsp safflower or olive oil

0.5 fresh lemon juice

0.5 cup chopped white onion

salt (1 tsp) and white pepper to taste


Directions

1. Wash thoroughly the greens and remove the hard stems (hard ones you cannot press down with two fingers). Line baking sheet with parchment paper, place the chrysanthemum leaves and bake on 375F for 10-15 minutes until soft.

2. Move the leaves into a medium bowl and set aside to cool.

3. Mix the lemon juice, apple cider vinegar, the garlic, salt, white pepper, and any juice that the greens produced in the oven while cooking to the cooked leaves in the bowl.

4. Gently mix, add the chopped onion and season more as needed, and enjoy hot or cold.


Tips

Best to enjoy cold, but can also be served as a warm side dish.

The greens should not be mushy, best not to overcook.

Can be also steamed, but I find the flavors more distinct when cooked in the oven.

Flavors will develop more if you leave in the fridge overnight, and may get slightly bitter.

Use vinegar instead of lemon juice for flavor variation.

Use the liquid that the greens produced as another salad dressing base, or to marinate meats.
