Fava Beans Side Dish

Ingredients
1 cup fava beans
1 white onion diced
4 tbsp tomato paste
3 cups water to cook the beans
0.5 cup water for the sauce
3 tbsp safflower or olive oil
salt to taste (0.5 tsp)
handful of chopped cilantro to garnish
Directions
1. Bring three cups of water to boil in a pan. Add pinch of salt, then add the beans to cook on medium heat for 30 minutes. Turn the heat off, cover, and let cool.
2. Pass the beans through the strainer, use the liquid from the beans to dissolve the tomato paste, if needed add some water (up to 0.5 cup).
3. Add the oil to the hot skillet/pot and saute the diced onions until translucent.
4. Add the beans to the onions and cover with the tomato paste mix, let boil. Turn the heat off and remove to the side.
5. Move to a serving bowl, taste for saltiness and adjust the flavor. Garnish with cilantro and serve warm.
Tips
Wash and soak the beans for 4-5 hours to facilitate the cooking time.
Fava beans don't need to be soaked overnight like most beans, and may develop some wrinkle over the edges when soaked, which is perfectly normal.
If the tomato paste makes it too sour, add a pinch of sugar to balance the flavors.
Use three cups of water to boil the beans, save the liquids to make a bean soup. You may also water your plants if you do not plan to use it.
