Walnut Bean Soup

Ingredients

0.5 cup fava beans

1 cup of walnuts (chopped) 2 stalks of fresh basil

4-5 cups of water

3 tbsp olive oil

salt (0.5 tsp) and black pepper to taste



Directions

1. Bring 4 cups of water to boil, add pinch of salt, the beans, and cook on medium heat for 25 minutes. Turn the heat off, cover, let cool to room temperature.

2. Dice the onions and saute in a pan until translucent to golden brown, but not all the way browned. Add the chopped walnuts and mix few times until the walnuts become fragrant - for 3-4 minutes total. Stay tuned not to burn the walnuts.

3. Add all drained liquid from the cooked beans to the onions and walnuts. There should be about 2-3 cups of bean stock, add additional 1 cup of water. Mix well, and add in the fava beans.

4.Bring to boil, then reduce the heat to medium low and let simmer for another 10 minutes.

5. Add the chopped basil before serving, and enjoy warm.



Tips

Wash and soak the beans for 4-5 hours to facilitate the cooking time.

Fava beans don't need to be soaked overnight lime most beans, and may develop some wrinkle over the edges when soaked, which is perfectly normal.

The flavors will develop more if you leave overnight, and the soup will taste even more delicious.
