Trout Beans a/k/a Jacob's Cattle Beans

When I decided to do the bean project, I practically bought every kind of beans available locally. Soaked them, tried in various recipes, tweaked few things, ate many many beans since January. But, a long story short, these beauties were my favorites. Perhaps, because I love trout fish, and these do look like little mini trouts, to me at least they do.


I have a delicious salad recipe for you to try with these beans. There are so many other dishes you can prepare with trout beans, really. As an excellent source of fiber and iron, trout beans are great for soups, stews, and dips.


Trout beans are close relatives to the kidney beans, a member of legume family. Besides health benefits, these are loaded with flavor and have a very fresh green-bean like taste. If you do not like beans, but are willing to try, I would recommend starting with these. Do not be disappointed (like I was) if they lose their dotted spots and turn into a light brown color after cooking. They for sure make up in the flavor department; the trout beans maintain the texture while absorb and enhance the taste of added ingredients, especially acid and salt.
