Raw Buckwheat Salad

Do not like Buckwheat? It is time you reconsider!

Ingredients
1 cup buckwheat (toasted)
1 large tomato
0.5 cup diced yellow pepper
0.5 cup diced celery
0.5 cup chopped parsley
0.5 cup diced red onions
4 tbsp olive oil
2-3 tbs fresh lemon juice salt to taste (0.5 tsp)
Directions
1. Day 1 - Make ahead: Wash the buckwheat few times until the water is clear. Soak in distilled 1.5 cup water overnight.
2. Day 2: Place the buckwheat into a mesh strainer and let all water come out while you dice and chop the veggies and herbs.
3. Place all chopped herbs and veggies in a large bowl: tomato, yellow pepper, celery, parsley, and onions. Add the buckwheat, olive oil, lemon juice, salt, mix well and taste to adjust salt as you like.
4. Serve right away and enjoy fresh.
Tips
The buckwheat can also be soaked for 6-8 hours, instead of overnight - longer it is socked, more softer it will be.
The salad is best to be consumed within few hours of preparation or within a day.
