Mache Bean Salad

Ingredients

4 cups of mache (lamb's lettuce) greens 0.5 cup chopped parsley

0.5 cup chopped tarragon

0.5 cup chopped mint

0.5 cup chopped dill

1 cup cooked pinto beans 1.5 tbsp brown rice vinegar

3 tbsp olive oil 0.5 tsp honey

salt (1 tsp)


Directions

1. In a large bowl, combine the mache and all chopped herbs (tarragon, parsley, mint, and dill). Best to layer and not mix to avoid breaking the greens.

2. Put the vinegar, sugar, olive oil, and salt (to taste) in a small mason jar. Close and shake well, then slowly drizzle on top of the greens.

3. Add the beans and enjoy.


Tips

Best to enjoy fresh and within an hour of preparing, otherwise the greens will become mushy.

Use tart vinegar options for best flavor balance.

Taste the dressing without honey and if you like it, do not add honey. It is added for balancing the acidity.

Use strong fresh herbs if you don't have all options from the ingredients (chervil, chives, thyme, etc.)
