I mentioned in my Cast-Iron Skillet Seasoning (Before) post the importance of taking care of your skillet, but I did not emphasize its value. Unless you prefer to season you skillet every month, and eventually get tired of it an throw it away, follow the below steps to save tons of time and enjoy your skillet forever. In return, your it will give you lots of delicious flavors, and will be your secret weapon ingredient no one would know about.


It is best to avoid using dish-washing liquids after cooking as they may scratch your skillet. Also, the soap will open the little pores and trap H2O in there, which will then turn into rust. How to clean it then, you ask? I use some kosher salt to scrub off the stuck food then rinse it with water using a soft bamboo towel (or paper towel). For stuck and stubborn food residue I boil water in there, and follow the above steps with salt. Then I dry the skillet and apply a very thin layer of safflower oil to seal the pores. I use bamboo towels instead of paper towels, as they are softer and I can wash and reuse them; I have a designated one for washing and another one for drying.


Tips

Talk or sing to the skillet while cleaning it to reward it for its hard work and the delicious meal it prepared for you.

Do not leave food overnight in the skillet, because you would not go to bed wearing make up, would you? I have a bad feeling about this one, but I cannot articulate the scientific reasons why it is not a good idea.
