Carrot Pulp Chips

Zero Waste Cooking Initiative

Ingredients
3 cups of carrot pulp 1/3 cup ground flax seeds 2 tbsp chia seeds
3 tbsp rye flour 2-3 tbsp sesame seeds
salt (0.5 tsp)
1 tbsp nutritional yeast (optional for flavor)
1-2 tbsp water (optional see step 2 below)
Directions
1. Combine the carrot pulp, flax seeds, chia seeds, rye flour, and sesame seeds in a mixing bowl and set aside for 5 minutes to rest.
2. After 5 minutes, you should be able to form a ball, if not, slowly add some water until you are able to form a ball. Divide the mixture into two parts.
3. Lay out parchment paper on your counter top, and spread the first part of the mixture on the sheet. Use a rolling pin to smooth out the mixture to a thickness of 3 to 4 millimeters, or as this as you prefer. Repeat with the second part of the mixture.
4. Transfer to the baking tray and bake for 40-45 minutes on 350F.
Tips
Lay a sheet of parchment paper on top to keep it from sticking to the rolling pin when rolling.
Sprinkle Trader Joe's Everything but the Bagel mix before baking to add extra flavor and seasoning.
It is best to pre-cut into small squares before baking, but also you can brake into small pieces instead of cutting after it is baked and cooled.
Taste the raw mixture and add nutritional yeast, salt, and other seasoning to your taste before baking.
