Beets and Garlic

Ingredients

2-3 medium beets

4-5 garlic cloves cut in half 6-7 bay leaves (fresh if available)

3 tbsp white vinegar

1 tsp salt

1 tsp whole white or black peppercorns

water as needed to cover the beets


Directions

1. Cut the beets into 1/2' thick rings and layer in the pan adding garlic, peppercorns, and bay leaves.

2. Season with salt and add water, barely covering the top layer.

3. Bring to boil, turn the heat off, add vinegar, cover and let cool. Remove from the heat.

4. Move into a glass jar or a container and enjoy cold.


Tips

Best to enjoy cold, but can also be served as a warm side.

The beets should not be mushy, best not to overcook.

The flavors will develop more if you leave in the fridge overnight.

Use white vinegar or apple cider vinegar, best no to use flavored ones.

Use the liquid to store the beets, and also use as other salad dressing bases as desired.
