Beet Burgers

Ingredients

4 medium grated beets (3 cups) 1 chopped onion 2 minced garlic cloves 2 tbsp olive oil 2 medium eggs 1.5 cups rolled oats 7 oz grated or crumbled feta cheese 0.5 cup chopped fresh basil pinch sea salt and black pepper


Directions

1. Place the grated beets, chopped onion, and minced garlic in a large mixing bowl.

2. Add olive oil, eggs, rolled oats, and basil and mix everything, then add the feta salt, and pepper and stir to combine.

3. Set aside for about 40-45 minutes, to allow the oats to soak up the liquids. (

4. Make even size balls with your hands, then gently press to make patties. You should be able to form about 8-10 burgers.

5. Place the patties on the parchment paper and bake for 20 minutes on 380-400F. The flip to the other size and bake for another 20-25 minutes until a crust is formed.


Tips

If the mixture is to loose, add some more oats.

If too dry while baking, add a tiny ice cube on top of each burger.

You can freeze some and bake later. Do not defrost in this case, just place from freezer into preheated oven.
